Montalbano Elicona Bread is the bread of the Nebrodi — the one you used to pick up from the baker early in the morning, wrapped in a cloth. Made with Sicilian durum wheat flour, natural leavening and water, baked in a stone wood-fired oven, it has a dark, crunchy crust and a yellow, compact crumb. It keeps for days, improving. It is the bread for pani cunzatu, for the charcuterie board, for the capocollo.
