Young White Pecorino is made from whole milk of pure sheep grazing on Nebrodi pastures. The curd is worked using traditional techniques, placed in rush baskets and dry-salted after just one day of rest. The result is a young cheese with a delicate, milky flavour and a soft, moist paste. Excellent on its own, perfect on charcuterie boards, extraordinary with honey and dried figs.
